RICE is the chief food of our Kashmiri and Bengali brethren.
It grows in abundance not only in Bangla Desh but also in the districts of
Sialkot, sheikhupura, Lyallpur, Jhang and Sargodha. We export thousands of tons
of it to many countries of the world, to earn foreign exchange for buying heavy
machinery for our industrial development. It requires a warm, damp climate and
a lot of water. It is sown in the rainy season in small fields. But, when the
seedlings come out, they are transplanted in very large fields. These are
surrounded by mud walls, about sixteen inches high. And they remain flooded
with water, till the plants grow to their natural height. They bear ears at
their tops. They ripen in about three months. Then they turn into golden yellow.
The seeds which we eat are covered with a rough, brown skin. Their husk is
taken off, before they are fit for human consumption. They are used for cooking
very delicious Pakistan dishes like pulao, firni and biryani.
